These versatile fritters are easy to make and can be eaten for breakfast in place of an omelette, for lunch or dinner perhaps with some toasted bread, mixed veggies and rice or chips as an accompanyment. Chickpea flour, instead of plain flour gives the fritters a unique ‘eggy’ taste and adding tofu for protein even gives them an egg-like texture. Seasoning with a pinch of chilli powder and cumin makes these fritters both delicious and moreish.
