Omega 3 chocolate brownies

A tasty sweet brownie treat with lots of healthier ingredient additions like chia seeds, omega 3, spelt and banana. Enjoy warm or cold!

Aaron set out to create a chocolate brownie that is delicious yet good for you with a range of nutritious ingredients.

  • 150g spelt/wholemeal flour
  • 2 mashed bananas
  • 2 tsp baking powder
  • 5 tbsp cacoa powder
  • 80g coconut sugar
  • 200ml plant milk of choice
  • 3 tbsp oil of choice
  • 2 chia ‘eggs’ (2 tbsp chia seeds soaked in 6 tbsp warm water. Soak for 15 minutes).
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Optional: 3 tbsp Omega 3 powder
  1. Mix all dry ingredients in a large bowl.
  2. Add the milk, oil, banana & vanilla and stir together thoroughly. Allow mixture to sit and soak up liquid for 10 minutes.
  3. Line a baking tray with parchment paper and pour in the mix.
  4. Place in the centre of the oven 180ºc and cook for 30-35 minutes. Stick a cocktail stick in the centre of the brownies and it should come out clean. If it has mixture on it pop back in the oven for another 5 minutes.

– Serve with Strawberries and/or ice cream to create a dessert.
