Tangy vegan koftas (makes 3)

A fancy, tasty and cruelty-free take on a kebab shop classic! A great ‘meaty’ bite with flavours of lemon, coriander and garlic. It’s easy to substitute coriander for another herb such as parsley, if preferred. Best to marinade for a least an hour, to let the flavours absorb and develop, better still overnight if you have the patience! Baked in just 20 minutes, or cook them on the BBQ for 15-2o minutes to ensure they turn a rich golden brown.
