Vegan pancakes

A quick and easy 3 ingredient pancake recipe.

This is a basic pancake recipe using just 3 ingredients. You can use this a budget breakfast option or pimp it up with extra ingredients. Aaron loves to add chia seeds, a pinch of salt, vanilla extract and experiment with different flours.

Why not add a scoop of protein powder, ½ tsp of cinnamon or turmeric, 1 tbsp cacao powder or some beetroot juice, to suit your taste.

  • 340g flour of choice
  • 275ml soya milk
  • 1 tsp baking powder
  • Oil to fry
  1. Whisk the flour, soya milk and baking powder in a mixing bowl until a smooth batter is formed.
  2. Put a small amount of oil into a frying pan, on a high heat, and then pour a ladle full of batter into the centre of the pan.
  3. Cook for approximately 2 minutes and then flip the pancake over, and cook the other side for 2 minutes.
  4. Repeat until the batter is used.
  5. Serve!

TIP: You want the batter to be fairly thick so it makes the perfect pancake shape when poured into the pan. If it’s a little runny, let it sit for 5 minutes so the ingredients soak up the liquid.

  • Top with maple syrup and chopped pecan nuts.
  • Top with fruit compote and fresh berries.
  • Top with vegan bacon and maple syrup for American style ‘bacon pancakes’.
