Tangy Vegan Koftas

 

Ingredients  

 
1 pack of Meatless Farm or Naturli mince. (Sainsburys) 
You can also Linda McCartney sausages. (1 pack defrosted) 
25g chopped coriander.
Generous pinch of salt. 
Season with black pepper. 
Juice of 1 lemon. 
2 minced garlic cloves 
1 medium chopped red onion.
1 tsp ground cumin
1/2 tsp turmeric. 
1/2 cup of breadcrumbs. 
1 tbsp olive oil. 
Method
1) Preheat oven to 200ºc. BBQ instructions below. Soak kebab sticks in water (to stop them burning) 
 
2) In a large bowl mix all ingredients together. Let the mince mix sit in the fridge overnight or at least half an hour. This helps the flavours develop. 
 
3) Shape 6 koftas around the kebab sticks. Press the mix firmly so it doesn’t crumble in the oven. On an oiled baking tray lay each kofta and coat/drizzle with a little oil.

4) Bake for 20 minutes. Serve with dairy free plain yoghurt or vegan sour cream. Alternatively cook on the BBQ 15-20 minutes (turning occasionally) until golden brown.
