Baked Vegetables in Puff Pastry
- seasonal vegetables
- mixed herbs
- sunflower oil
- ready to use puff pastry (many supermarket own-brand ones are vegan)
- Dice, quite small, a mixture of 4 vegetables such as carrots, celery, parsnip and red pepper.
- Mix the vegetables with a sprinkling of mixed herbs and a splash of sunflower oil.
- Place the vegetables in a shallow baking dish and cover with puff pastry. Bake at 200C/400F/Gas Mark 6 for one hour.
